Blueberry White Chocolate scones – the recipe

“The smell of sweet baking and then the taste of Scones fresh from the oven…….ahhh”

that is what lots of you have said after enjoying Lonny’s scones first thing in the morning.

and below the recipe you can try at home on a lazy weekend.

Ingredients:

Step 1:

Preheat your oven to 450 degrees F.  Line 2 large metal baking trays with parchment paper.

Step 2:

In a large cold bowl mix/rub together the following ingredients ~ 5 cups  All Purpose flour, 1/2 cup sugar, 2 tablespoons baking powder, 1 teaspoon salt, 225 grams white chocolate chips, 1 cup Cold Butter that has been cut into small pieces.

Step 3:

In a sceond bowl mix together the following ingredients ~ 1 1/2 cup Buttermilk. 2 large eggs.

Step 4:

Combine the two bowls using just enough of the wet ingredients (bowl two) to combine the dough to a soft which holds together (not too sticky).

Step 5:

Flour your work surface and drop the dough onto the worksurface. Spread out and sprinkle on the top 2 cups of blueberries.  Gently fold the blueberries into the dough without squashing the berries.  Form the scones into uniformly sized individual scones and place on your bakig trays.  The shape and size can be your choice and you should achieve between 15 – 25 scones depending upon the size you make.

Step 6:

Cook scones in your preheated oven 450 degrees F for 20 minutes.  Cooking times will vary depending upon your own oven and the size of the scones you make, so check them regularly.  They will be cooked when you see a very light golden colour happening to the edges and top.

Enjoy with a little salted butter and a cup of your favourite coffee or tea – yummy.
